I have a confession to make. I’m not a huge fan of chicken. I do, however, love my crockpot. I also know that chicken is a healthier meat than, say, red meat. So, I make it for my family even though I prefer not to eat it. With that said, these crockpot garlic chicken thighs were tender, juicy, and quite delicious! I put it on my to-make-again list and would love to share it with you!
Crockpot Garlic Chicken Thighs
I love to tweak recipes to fit my family’s specific likes and needs. Also, another confession: as a busy mom, I stopped using measurement tools long ago. I know not everyone likes to go this route. But honestly, who has time to dig through the draw for a tablespoon, teaspoon, etc? So, I channel the spirit of ancestors past and use my eyeballs to measure.
I do know that is not what everyone’s cup of tea is. I estimated how much seasoning I used. (listen, I know it looks like a lot; I have a husband who loves to taste more of the seasoning than the actual meat. Weird, I know) So, adjust the amounts accordingly to your tastes and family needs!
Note: You can skip the brining step if you don’t have time. However, this indeed contributed to the juiciness and tenderness of the chicken. Also, I’m sure this recipe can be made with chicken breast. However, I found that chicken thighs are much more juicy!
Ingredients
- One package of Chicken Thighs
- Honey
- Minced Garlic
- Soy Sauce
- 2 Tablespoons Seasoned Salt
- 2 Tablespoons Pepper
- 3 Teaspoons Salt
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 1 Lime
- 1/2 cup Honey

- Oven
- Foil
- Baking sheet
Instructions For Crockpot Chicken Thighs
- Prepare the chicken thighs by defrosting the whole package. Of course, you do not have to use the whole package; adjust according to your family size.
- Brine the chicken with salt six hours before cooking. You can skip this step, but brining does contribute to juiciness.
- Sprinkle the seasoning over the chicken liberally and place in the crockpot.
- Add the honey, lime juice, and soy sauce together and add to the chicken. Set aside a small amount, around 1/4 cup. (This is just an estimate, like I said, I simply estimated how much I would need left over)
- Cook on low for 6-7 hours or high for 3-4 hours.
- Preheat the oven to 400 and prepare the baking sheet with foil.
- Transfer the chicken to the foil sheet, add more soy sauce mixture and garlic to the chicken, and brush with a cooking brush.
- Place in the oven for 30 minutes.
- Remove the chicken from the oven and rest for five to ten minutes.
- Serve while hot.
